STUFFED BISCUITS






                                                                 Ingredients needed are :
           
         
For the Biscuit you need Bisquick pancake mix or you can use all purpose flour and baking powder to make your own mix and greek yogurt( you can use any kind of yogurt). For the stuffing you need onions, tomatoes, ginger garlic paste and veggies of your preference.

                   

I have taken 2 cups of pancake mix, 1cup of yogurt and 1/2 cup of milk. If you are using all purpose flour/maida for 2 cups of flour you need to add 1 tbspn of baking powder. You can use any kind  of Yogurt you want I have used greek nonfat one, you can even use buttermilk you have one, and this measurement will make up to 6 biscuits, so you can adjust the measurements according to your need.
Mix up all the ingredients, Use a fork or spoon to mix it up, coz when you use your hands you will end up mixing the dough too much, so the biscuits won't be soft and puffy. With the fork or spoon mix the dough by roughly making folds but not more than 10 folds, If you press the dough too hard you will make the air pockets escape and it will turn up hard once you bake. After making the dough refrigerate it for an hour or so.

                                                                                                              
Make the basic onion tomato masala by sauteing the onions, tomatoes and ginger garlic paste.




Add the veggies I have used potatoes, peas, carrots and beans, salt and chilli powder. Of course you can make any stuffing you want. I have tried it with filling of spanakopita it came out well for that stuffing you need to saute onions and spinach for 3 to 5 mins and then add feta cheese, salt and pepper, that's it you can add mushroom to it if you want that gives the crunchy taste to it. Try it with any kind of stuffing you won't be disappointed.






Cook the mixture for about 10 to 15 mins, If you microwave the veggies, you can cut down the cooking process.

Once the stuffing is ready, bring it down to room temperature






                         

Dust your work surface with flour and then take a ball of dough and roll it into a round disc of 1/2 inch thick.

                         

If you have a press like this use it up, or if you have Calzone press that would be very perfect, Or If you don't have any press don't sweat it out, just put the filling on one side of disc, and bring the other half to close the disc that's it.

    
Repeat the process for the remaining part of the dough, Don't worry about the shape , If you try making it up to proper semicircle or crescent you will press the dough too much and the crust will turn out hard and crunchy. Once done arrange it on baking tray or rack lined with aluminium foil, don't need to grease the foil.

                        

Before you could start making the biscuits, you can pre-heat the oven to about 400*F, Once the oven is ready place the goodies in the oven and bake it for about 15 to 20 mins till they into brown in color.
The cooking time depends on your oven. So keep an eye on it. Once it comes to room temperature you can easily take it off from the foil, Don't try it when its really hot, it will get stuck to the foil. You can enjoy them just as it is or you can have with any condiments you like.
